Creating simple recipe of Lemon Pound Cake

INGREDIENTS:

  • 2/3cup soft butter or margarine
  • 1cup sugar
  • 4 eggs
  • 1tsp grated lemon rind
  • 1 1/2 tbsp lemon juice
  • 2cups sifted cake flour
  • 1/2tsp baking powder
  • 1/2tsp salt
PROCEDURE:
  Heat oven to 300F (150C).grease a 9-x5-x3
 inch (23-x12.5x7.5-cm)loaf pan.

Cream butter or margarine until fluffy.Add sugar gradually and beat well after each addition. Continue beating until mixture is fully.Add eggs, one at a time, beating well after each addition. Stir in lemon rind and lemon juice.
    Sift flour, baking powder and salt together and stir into first mixture, stirring only until blended.
Spoon into prepared pan and bake about 1 hour and 15 minutes or until a toothpick stuck in the center of the cake comes out  clean. Turn out and cool on rack.
